Wild salmon ala Provence with veggy Couscous – lowcarb / Kräuter Wildlachs ala Provence mit Gemüse Couscous

Isn’t there anything that could beat a healthy and light lunch on a coozy sunday? I guess no :) This is officialy my second Vilorygreen’s classic, because it’s just such a tradition. It became a tradition since I could convince my family to eat that ones in a week with veggy couscous! :) It makes you feel you so light and pretty afterwards, that you barley can’t get enough! It also doesn’t take that long. It’s basicly only the waiting time for the fish to cook! So no excuse for not having that delicious, healthy, tasty and clean lunch!

1)For the couscous I used the simple bio couscous. Use 2 cups (depends on how many peeps you are) of the couscous and about 1,5 cups of boiling water. Put it aside for about 10 minutes. That’s how quick it’s done :)  Cutt some pepper of your choice together with some charlottes and let them become well cooked in the pan. Then put them aside so you can add them togehter once the couscous is ready as well.

2) The Fish comes already with a super tasty and – to my surprise – with not so much fat –  and an awesome herb mixture on it. So all you really have to do is use a tiny bit of healthy oil to frie it. It’ll only take about 20 minutes. Put the heat on middle on the beginnen, then you can slowly heat it up more. But always watch out for it! This is how it should look once it’s done :
