King Prawns with Couscous Avocado and Tomato – Low Carb

Motto of this week: Low carb – as much as you can! Just eat it and enjoy the healthyness! :-)

I staIMG_0766rted this week with one of my favorite low carb dishes. I eat it almost every two weeks. It’s so light and tasty and it works just great if you have a daily workout on your plan :-) Andi f you don’t workout, you are still going to love it!

And all you need is this:

  • CousCous ( 1,5 cups)
  • 1 Avocado
  • King Prawns
  • 1 small red onion (If you have a schallott instead, use it. This will be needed fort he couscous)
  • 1 or 2 tomatos
  • 1 onion
  • 5-7 Kalamata olives
  • A bit of feta cheese
  • Spices: a bit of curry powder, salt, pepper, and whatever you desire :-)

1) Before you frie the king prawns, it’s important that wash them a bit. Then you can either add some soy sauce or just frie them as they are. Cut an onion into small cubes and add it into the pan.

2 )To prepare the couscous, you basicly use 1,5 more cups of watter than you used for the couscous. For instance, I used one heaped cup of couscous and added 1,5 cups of boiling water. And that’s it, put it aside and let it rise :-) They should be done after 15 minutes. Then cut the avocado and tomato and add them to the couscous bowl. Spice it as much as you want, no limits set :-)

3) Once the prawns are done spice them with curry powder, pepper and a bit of salt of you like to. If you like, you can add some feta cheese on the top or simply use parmigiano :-)

And done!! :-)
